how to make beautiful hand-cut pasta 🍝 without a pasta maker


My kids have recently gotten into making pasta at home with me. They love it.

While I prefer long strands of noodles, they're super into shapes. We've made farfalle, gemelli, orecchiette, casarecce, and some other shapes they've created or made by mistake. 😆

We usually end up making a LOT of pasta dough, sometimes a triple batch in one day, so for Christmas my husband bought me this pasta roller attachment for the stand mixer. 🙌 Very exciting as now I can pump out more pasta for the kids to experiment with!

HOWEVER—

Did you know you don't need a pasta roller or any other equipment to make your own pasta at home?

Almost exactly 11 years ago, I shared my technique on the blog for colorful homemade pasta and this is the exact same recipe I'm using now with my kids.

It's incredibly easy to follow, even for beginners. You just need a smooth work surface, a rolling pin, and a sharp knife. Seriously, you don't even need a bowl to mix the ingredients in!

And you only need three ingredients for the base recipe (with a fourth ingredient if you want to add natural colors or herbs).

If you've never made your own gourmet pasta at home, take this as your sign to try it. You probably already have all the ingredients you need to get started!

My tutorial covers hand-cut noodles, but I'm thinking I might add more recipes for our family's favorite shapes in the near future!

Tonight, we're having friends over to celebrate. It's a family sleepover (like a kids' sleepover, but the adults come too... SO fun for us since these are friends we've known before any of us had kids) and we have multiple meals planned through tomorrow.

We're not doing pasta, but I've had my Vietnamese pulled pork in the slow cooker for several hours and the house smells amazing!!
