my favorite pickles


Every summer, it seems like my cucumber vines take foreverrrr to ripen and then overnight, I'll get a dozen cucumbers, followed by a few more each day until the first frost.

We eat most of them fresh in salads and sandwiches or cooked as a side dish—Have you ever had cooked cucumber? It's delicious and tastes just like zucchini—but we often have more than we can use before they start to turn mushy.

So we end up doing a lot of pickling: dill pickles, spicy dill pickles, bread and butter pickles, and my personal favorite, Asian quick pickles.

These have the perfect balance of sweet, savory, and tangy without being mouth-puckering, and they're so good I'll eat them straight out of the jar. The Asian flavor profile is a nice change from traditional pickles and they even work well with other dishes that don't have Asian influences.

So if you're looking for a way to use up your glut of cucumbers this summer, give these a try!

These are called quick pickles, by the way, because all they need is a short time in the fridge to develop their flavor. No canning necessary!

Other types of pickle recipes you find may require a boiling water bath for safe canning, and if you go that route, I always, always recommend using an electric water bath canner because it just makes the whole process so easy (and doesn't take up space on your stove).
